Exclusive access takes us behind the scenes of one of the biggest restaurants in the UK: the JRC Global Buffet. It covers 27,000 square feet, serves up to 350 dishes from all over the world, and can feed as many as 3000 people every day. But how do you feed people as much food as they want for a set price and keep your business booming?
Filming on one of the busiest days of the year, we learn that everything here is about volume and speed – and it’s quite an art. Along the way we meet the army of people who keep this mega meal machine running smoothly, from the chefs from 20 different nations to the floor team typically covering five miles a shift and cleaning up to 65 tonnes of food waste each year.
